Potato gratin
with bacon
and Kochkäse

  1. Wash the potatoes and cook them with their skins on in a pan of boiling salted water. Drain the potatoes and cut them into thin slices.
  2. Wash the spring onions, remove the filaments under the buld, the finely chop the green stalks and bulb.
  3. Fry the diced bacon, potato slices and sliced onions in oil. Season with salt and pepper to taste.
  4. Preheat the oven to 200°C (fan-assisted oven).
  5. In a saucepan, stir the plain Kochkäse and the thick cream over a low heat, stirring continuously.
  6. Spread the potatoes over the bottom of a gratin dish. Pour the Kochkäse sauce over the potatoes and bake the gratin in the oven for about 20-30 minutes.
