Potato gratin
with bacon
and Kochkäse

- Wash the potatoes and cook them with their skins on in a pan of boiling salted water. Drain the potatoes and cut them into thin slices.
- Wash the spring onions, remove the filaments under the buld, the finely chop the green stalks and bulb.
- Fry the diced bacon, potato slices and sliced onions in oil. Season with salt and pepper to taste.
- Preheat the oven to 200°C (fan-assisted oven).
- In a saucepan, stir the plain Kochkäse and the thick cream over a low heat, stirring continuously.
- Spread the potatoes over the bottom of a gratin dish. Pour the Kochkäse sauce over the potatoes and bake the gratin in the oven for about 20-30 minutes.
