with fresh cream

- Place the shallot, trout fillets, chives and lemon juice in the bowl of a food processor, season to taste with salt and pepper and finely chop.
- Add the fresh cream and mix with a fork until the desired consistency is reached. Refrigerate in a glass container until ready to serve.
- Serve with toasted bread or crackers.
