  1. Slice the zucchini into very thin rounds, 1 to 2 mm thick, using a mandoline. Finely slice the red onion, cut the smoked ham into strips and place everything in a large mixing bowl.
  2. In a separate bowl, whisk the EKABE plain Kochkäse with the eggs, milk, cornstarch, Dijon mustard, salt and pepper until smooth and homogeneous.
  3. Preheat the oven to 180 °C. Line a 19 cm round springform pan with baking paper.
  4. Pour the mixture over the zucchini mixture and gently stir until everything is evenly coated.
  5. Arrange the zucchini mixture in the prepared pan, pressing it down lightly as you go. Pour the remaining mixture over the top and bake for 50 to 60 minutes, until the surface is golden and the center is fully set.
  6. Let the cake rest for 15 minutes before slicing. Serve warm or at room temperature.
