Red berry compote
with cream

- Pour the berries and 60 ml of water into a large saucepan over medium-low heat. Cook for 10 minutes, stirring occasionally, until the mixture begins to simmer.
- Reduce the heat, cover and simmer for another 20 minutes.
- Dissolve the cornstarch in the remaining 15 ml of water. Gradually pour the mixture into the red berry compote, whisking continuously; it should thicken to an applesauce-like consistency. Leave to cool. Stir in the vanilla, then cover and refrigerate until ready to serve.
- Serve well chilled, topped with EKABE 4% dairy specialty.
