Cheesecake

Recipe

For the Speculoos base:

  1. Blend the Speculoos biscuits in a food processor until finely crushed. Melt the butter and mix it with the crumbled biscuits. Place a large sheet of parchment paper on a baking tray and arrange the 8 pastry rings on it. Divide the biscuit mixture evenly among the rings and press it down firmely using the back of a teaspoon. Bake at 175° C for 10 to 12 minutes. Remove from the oven and let the bases cool inside the rings.

Orange garnish:

  1. Peel the oranges, remove the segments and collect the juice. Cut the segments into pieces. Soak the gelatine in a little cold water. In a bowl, mix the full fat soft cheese with the sugar, 75 g of orange jam, and orange pieces. Heat the orange juice and dissolve the gelatin in it. Stir 2 tablespoons of the orange mixture into the gelatine mixture, then pour this gelatin mixture back into the rest of the orange mixture and stir again. Refrigerate until the cream stars to set (about 20 minutes).
  2. Whip the whipping cream until stiff and add it to the orange cream. Divide the orange filling into the rings, on top of the Speculoos base. Leave to cool for at least 2 hours until the cream is set. Carefully remove the rings.
  3. Heat the remaining jam with the orange liqueur and brush it over the surface of the cheesecakes. Decorate with a slice of orange.
