Recipe

  1. Preheat the oven to 170°C (top and bottom heat). Line a 25 cm loaf tin with parchment paper.
  2. Cut the orange into quarters, keeping the peel on. Remove the seeds. Place the quarters in a blender and blend until finely puréed.
  3. Add the sugar and eggs, then blend briefly until smooth. Add the EKABE soft cheese and pulse a few times until fully combined.
  4. In a separate bowl, mix the flour, baking powder, and salt. Gently fold this into the orange mixture, being careful not to overmix.
  5. Pour the batter into the prepared tin. Bake for 45-50 minutes. If necessary, check doneness with a toothpick. Allow the cake to cool slightly in the tin before transferring it to a wire rack.
  6. For the icing, sift the icing sugar into a bowl. Add the grated orange zest and orange juice, one tablespoon at a time, stirring until you reach a thick but pourable consistency. Drizzle over the cooled cake and let it set.
