Sauce Trio

- Heat the oil in a saucepan over medium heat. Add the shallot and sauté until translucent.
- Stir in the curry paste, mango chutney, tomato paste and chili flakes, if using. Cook for 1 minute.
- Pour in the stock and whisk until smooth. Increase the heat and cook for 3 to 4 minutes, until reduced by half.
- Stir in EKABE 4% dairy specialty and simmer gently until thickened.
- Just before serving, stir in the lime juice and garnish with diced fresh mango.
