Cod fillet
with watercress
and lemon sauce

- Preheat the oven to 180°C, top/bottom heat.
- Drizzle olive oil over the cod fillets and season with salt and pepper. Slice 1 lemon. Place 1 portion of cod on a sheet of aluminum foil and top with a few lemon slices. Close the foil loosely. Repeat the operation with the other 3 portions.
- Set aside a few watercress leaves for garnish. Chop the rest and mix with the EKABE thick cream, mayonnaise, yoghurt, zest and juice of 1 lemon, salt and pepper to taste.
- Place the 4 papillotes on a baking tray and bake for 30 minutes.
- Serve the cod with the creamy sauce and steamed potatoes. Garnish with a few watercress leaves and lemon slices.
