Kouglof
with fresh cheese
and raspberries

- Preheat the oven to 180°C (fan-assisted oven).
- In a large bowl, beat the butter with the sugar and vanilla extract until the mixture becomes fluffy. Add the eggs one at a time and mix. Add the full fat soft cheese and thick cream and mix again.
- In another bowl, mix together the flour, cornflour and baking powder. Gradually add the butter,egg and full fat sof cheese mixture, stirring constantly. Finally, gently fold in the raspberries.
- Grease a Kouglof tin or cake tin. Pour in the batter. Bake in the oven for about 1 hour at 180°C. Remove from the oven and leave to stand for about 10 minutes. Turn the cake out of the tin and allow it to cool completely on a ware rack. Before serving, dust with icing sugar and decorate the serving dish with a few raspberries.
