- Preheat the oven to 170°C (top and bottom heat). Line a 25 cm loaf tin with parchment paper.
- Cut the orange into quarters, keeping the peel on. Remove the seeds. Place the quarters in a blender and blend until finely puréed.
- Add the sugar and eggs, then blend briefly until smooth. Add the EKABE soft cheese and pulse a few times until fully combined.
- In a separate bowl, mix the flour, baking powder, and salt. Gently fold this into the orange mixture, being careful not to overmix.
- Pour the batter into the prepared tin. Bake for 45-50 minutes. If necessary, check doneness with a toothpick. Allow the cake to cool slightly in the tin before transferring it to a wire rack.
- For the icing, sift the icing sugar into a bowl. Add the grated orange zest and orange juice, one tablespoon at a time, stirring until you reach a thick but pourable consistency. Drizzle over the cooled cake and let it set.
