with cream

  1. Pour the berries and 60 ml of water into a large saucepan over medium-low heat. Cook for 10 minutes, stirring occasionally, until the mixture begins to simmer.
  2. Reduce the heat, cover and simmer for another 20 minutes.
  3. Dissolve the cornstarch in the remaining 15 ml of water. Gradually pour the mixture into the red berry compote, whisking continuously; it should thicken to an applesauce-like consistency. Leave to cool. Stir in the vanilla, then cover and refrigerate until ready to serve.
  4. Serve well chilled, topped with EKABE 4% dairy specialty.
