Ingredients:

  1. Heat the oil in a saucepan over medium heat. Add the shallot and sauté until translucent.
  2. Stir in the curry paste, mango chutney, tomato paste and chili flakes, if using. Cook for 1 minute.
  3. Pour in the stock and whisk until smooth. Increase the heat and cook for 3 to 4 minutes, until reduced by half.
  4. Stir in EKABE 4% dairy specialty and simmer gently until thickened.
  5. Just before serving, stir in the lime juice and garnish with diced fresh mango.
