with creamy
mustard sauce

  1. Preheat the oven to 200°C, top/bottom heat. Season the pork fillets with salt and pepper.
  2. Heat the oil in a large ovenproof skillet over medium-high heat. Sear the pork on all sides until golden brown, about 5 minutes total.
  3. Transfer the skillet to the oven and roast for 12 to 15 minutes or until a thermometer reads 65°C for medium, or 68° C for well done.
  4. Remove the pork from the oven and place it on a platter; cover it with foil and let it rest while you prepare the sauce.
  5. Return the same skillet to the hob over medium heat. Add the EKABE fresh cream and both mustards. Scrape the bottom of the pan to incorporate the cooking juices. Add tarragon and parsley and salt and pepper to taste.
  6. Slice the pork fillets and arrange on a large platter. Top with creamy mustard sauce and sprinkle with pink peppercorns.
